How To Make The Perfect BIRTHDAY CAKE | Dessert Person
Is there anything better than birthday cake? I don’t know about you, but to me, bday cake always means yellow cake and chocolate frosting. This vanilla-scented cake bakes up extremely light and tender, but still has the unmistakable richness and color of a yolky batter, while the super-easy frosting gets balance and tang from cream cheese and unsweetened chocolate. Claire gives lots of pointers for layer cake construction, like what to do if you’re trying to frost it in a 90-degree kitchen (hint: it involves an AC window unit).

Classic Birthday Cake
Special Equipment:
Stand mixer, three 8-inch cake pans

Butter for the pans

2 sticks unsalted butter (8 oz / 226g), at room temperature

  • What kind of cake do you request on your birthday? Leave a comment!

    • My mom's oatmeal cake. 😋

    • Chocolate

    • Any cake that contains coconut mmmmmm.

    • Any cake that contains coconut, mmmmmm💕

    • angel food.........the LEAST fattening!!!!!

  • I just realized claires bedroom is the walk through pantry of ba

  • Ohhhh poor Claire.

  • I think Claire should get one of those giant industrial AC. After all, her kitchen is a factory where good things come from.

  • I think these videos have more commercials than any channel I’ve ever watched lol

  • Haha sup Gemini ♊

  • "i don't want someone to make my birthday cake. Whaaat. It's less sad than it sounds" This summarises my birthdays so well. I can get good cakes when I buy them but i wanna make my own! But then making your own cake for your own birthday 😛

  • “It’s good” he said with a tone almost like he was trying to convince himself as well as the audience.

  • Oh my gosh, Claire Claire Claire, 😂! You're book is amazing. I just did this cake with your help, it came out the best! Thanks so much. So many congrats on your book and exciting projects 😊

  • I have to say, I love the chaotic energy in these videos. The intense music makes me crack up every single time! Especially because real life baking is literally JUST like this. *hyperventilating as she bakes*

  • The sound effect when she puts the gloves down, caught me of guard into a non stop LOL . She's the best...

  • Love how transparent you are, you really looked annoyed, you rolled your eyes a few times... real tv, can't hide it... blame the editor.

  • I like that this is a very honest video of how baking can go wrong even if you stick to the recipe. Also I gotta say that I missed the I don't want to see Claire suffer...just maybe a smol struggle :D

  • Maybe I should stop drinking this coffee! *finishes off the rest of said coffee 😂 love your channel and you as a person in general!! 😁

  • I love Claire's personality 😩💛💛💛

  • I just found you and I like your style! You explain WHY things are the way they are

  • The cake slice falling apart gives me flashbacks to when it happened at BA

  • "it's less sad than it sounds" yes it really is! but one time i made my own birthday cake, and i wrote "happy birthday to maja" with frosting on it. and only later when i was telling my friend about it, because i was so proud of the cake, he laughed and i realized how sad it sounded. but it was a delicious cake and sometimes you just have to make your own bday cake to make sure it tastes good for you!

  • The crises in this episode brings me back to Gourmet Makes

  • not the introoooooooooo 😂😭😂😭😂😭

  • Can you do a video for your coconut cake?

  • Made this cake, was rather disappointed by the end result. Followed the instructions precisely, even weighted the flour, but it came out rather dry and boring. Going back to tried and tested TASTY for cakes.

  • this episode is pure comedy

  • You're a trooper Claire, that's part of the reason we love to watch you do your magic. Yes, the weather outside can effect the tools in the kitchen like ovens. When the weather gets hot natural gas pressure can increases causing more efficient combustion/baking of cakes in this case. As for air conditioners temperature settings and moving the setting to a cooler setting; it doesn't change the temperature of the air coming out of the AC. The AC temperature setting tells the AC compressor when to stop and start. Typically the maximum a residential AC can cool the indoors (by removing heat) is 20 degrees cooler than it is outdoors. I've been know to say that in the kitchen cooking and baking is also a practice in applied physics and science. No two times are there exact results because the initial conditions are never exactly the same. From different conditions, material and chemicals and their interaction, we get to enjoy one of the great pleasures in life, eating. lol. Thank you for being you.

  • Today I learned Claire saffitz and I both have an orange tabby and that huge scratching post lol

  • I would just like to say that all the various pet cams really just... they just make it for me. It's the cherry on top of a PERFECT birthday cake :)

  • Would it be okay to substitute the chocolate in the frosting for white chocolate?

  • My heart skipped a beat when the cake slice fell over😂😂 Love Claire and her baking style!❤

  • This video was so chaotic, I was half expecting her to call in “Rhoda” at some point

  • I love Mare of Easttown! She would definitely use all the "bleeps".

  • mmmmm yummy I can taste the particles of dust and debris from the AC in the frosting. what a special touch

  • What I really want to know is what cake stand/dome or container do you use to hold such a beast of a cake? I know that the frosting keeps it moist, but the cake must be protected after it's cut into!

  • Vinny should have a mic too so we can hear his sassy comments more clearly 😜

  • Until she learns how to bake a cake with whole eggs, I’m not watching

  • Have never made cakes before and tried this recipe and it turned out amazing! Literally ate a slice every single day :)

  • I make my own birthday cake too!! Usually make the whole meal honestly. 😂 Love making it the way I like it and then having others like it too. 😂😂 Best B-Day gift. 🤷‍♀️🎉

  • It makes me feel so much better when things don’t work out perfectly for Claire because I get so disheartened when my own baking doesn’t turn out. Knowing that even a professional pastry chef messes up from time to time is relieving

  • You aren't supposed to have air bubbles in your frosting!?!? This is a revelation, I always make my frosting fluffy like mousse lol 😅

  • Claire: “Okay, I have to do a thing.” Drum player: “THAT’S MY CUE!”

  • Your camera person/editor add so much humor to your already fun videos and personality. What a great combo!

  • I want to veganise this. Love Claire.

  • Claire is the most relatable person in the food content world. She shows us how things will not be perfect every time, but we can still keep going and create delicious things. Thank you Claire we appreciate you!

  • I'm sorry Claire I don't know why I love watching you suffer as you bake. Maybe it just makes me feel better about being frantic in my own kitchen when nothing goes according to plan.

  • I made this cake for my birthday this year. It was so delicious!

  • Yummy!

  • I'm just discovering this channel! I love it so much! I love it even more for the reason this video was posted on my birthday! 🎉🎁❤️

  • Claire’s tiny laughs are so wholesome and adorable

  • Claire if you are not just the cutest! 💕Thank you for your recipes!

  • The frosting on this cake is positively delicious. However, my cake turned out too crumbly and I’m wondering if it had something to do with the fact that I subbed cake flour for AP?

  • My birthday cake has always been carrot cake with cream cheese frosting. For 22 years mom made it for me. Then i went vegan and she asked my wonderful partner to help out and veganize it

  • this episode has great british bake off energy

  • I assume that bakewear is overwhelmingly nonstick because non-bakers think it sounds good

  • I would urge you to get rid of the aluminium pans bc there’s been significant evidence about using aluminium in cooking and nerve diseases such as Alzheimer’s!!

  • Not to toot my own horn, but I'm pretty good at making pastries. I've been teaching myself since i was young. Cakes have always been my weak point though TBH i think all your tips may have solved all the issues ive been having so thank you. 💜

  • the lopsided cake issue 😭😭, i could relate to that so much like literally the cakes were playing mind tricks on us at that point 💀💀

  • "Sometimes I make my own birthday cake...I don't want anyone else to make my birthday cake." - this is the most Virgo statement I've ever heard.

  • I love this video. Lol I feel so encouraged and a home baker right now- she’s so relatable! The whole debacle with the rogue oven temp cooking her cakes too fast 🙌🏻 been. There.

  • That was a great video because it showed real life. I loved it!

  • "let's just take this whole episode and forget everything that it." - Claire

  • 1:12 NICE

  • Claire turning the oven off and forgetting the completed food inside of it is shockingly relatable

  • So chaotic and relatable 😹 we love her!

  • Can you make a wedding cake? 🥺🥺💍👰‍♀️

  • why is no one talking about how gorgeous those candles are in her recipe book

  • am i crazy or does claire seem annoyed bu the producers while mixing the dry ingredients 😗

  • Im so happy that you have your own page now, i loved your videos and they truly helped me out on bad times, i will keep on watching you from this chanel :)

  • i love you!!!

  • I know a lot of people freeze their cakes before decorating - tips for keeping it fresh & moist?

  • This was my most favorite episode so far; I loved everything about it!! Thanks, Claire!!

  • Look into get out of mold infested mobile home Ann R. Go fund me site.

  • LMFAO the slow push in as Claire pulsed the mixer was so entertaining

  • This is giving me BA test kitchen PTSD.

  • Super exquisite friend cake you have been great and very beautiful totally appetizing good video I'll stay here in your kitchen and thank you for sharing

  • The introduction to this video reminds me of Everywhere At The End Of Time with the disjointed piano music

  • Is Claire a virgo?

  • I appreciate the absolute chaotic reality of this chapter. Watching you cope with temperamental cakes, mixers, cream cheese, etc. helps make baking much more accessible!!

  • India tree sprinkles?

  • When I say I would die for Claire!!! I love that we love the chaos of this ep, major Gourmet Bakes nostalgia. Claire, you're the best and I love you. Also I'm gonna try (and fail) to bake this.

  • That cake will be 2nd to my favorite carrot ☺️

  • Not intending to be mean, but it feels somehow relieving to know that even an expert like Claire can run into all sort of issues. It makes me feel better of all my mishaps 😅🤩

  • I need Clair to get rights over gourmet makes👏🏻👏🏻

  • Wouldn’t it be great if there was always an accompanying recipe for the unused portions of eggs. Meringues! Yay!

  • The cake looks delicious! And the best part is watching you experiencing the type of challenges that a home baker might run into.

  • The best most realistic cooking show ever! Thanks for letting the camera roll! We have all been there-sometimes cake just happens and you have to deal with it. Claire is the BEST! ❤️❤️❤️

  • The ending is why I always plate cake on its side 😂

  • Ice Cream cake.

  • Made this for my husband's birthday & everyone loved it. Going to make it again for my daughter's 1st birthday. Might make a mini version for her smash cake as well.

  • the cat cams at the end of Claire vids are really the icing on the cake :p :3

  • I have been trying to master making a butter based cake for MONTHS and with this recipe I finally did it! Thank you Claire!!

  • You’re a real one Claire lol

  • My dad made this for my mom last year and sent me photos of "Claire's cake"

  • I loved this video because this is exactly how it goes whenever I try to bake something in my 35ºC kitchen in a VERY hot and humid tropical country. Your pain is my pain.

  • Not to laugh at your pain but.... 😂 I’m a cake decorator and make 100+ cakes a week, and at work it’s easy and I can pop cakes out in minutes! However, at home... it’s a completely different story!! This is literally how it is! The struggle it real, especially when you make everything from scratch!! I’m down in SC and I can tell you hot kitchens make homemade icing very difficult to work with! You did great though! I always love your videos! I wish I we could make cakes together!! ❤️

  • Claire having a literal meltdown at the end is such a mood. Baking in the summer is torture.

  • In a thousand years when in doubt about how much it cost powdered sugar, they'll have this video for reference. (Claire, I loved the chaotic energy of this video!).

  • I really related to this process of making a birthday cake. Happens like this every time

  • Oh my god, the thing about lighter coloured tins makes so much sense now someone has said it out loud. Thank you for solving this for me! Haha
